Purpose
 
Current development of food factor research has accumulated a book of knowledge about the mechanism of their physiological action at molecular level. This allows us to design the basic strategy for practical use of food functions not only in disease prevention and anti-aging but also in cooperative use with modern medical treatment to improve therapeutic efficacy or to reduce disadvantageous side effects.

For the goal, we have to learn more about the similarity and difference in the mode of action of food or food factor and drug. Therefore, we will discuss several topics, in the present symposium, such as the oxidative stress as a modulator of food factor function, the molecular targets of food factor in chemoprevention, diabetic, dementia and anti-aging. Further discussion will be focused on the strategy for applying food function in supplement and functional food.

History and Background
The International Niigata symposium on Diet and Health is one of the events of "The World Forum on Food and Flowers in Niigata" that is an annual event held in Niigata city since 2005. Every year, some experts were invited from abroad and discussed on specific topics related to foods and health issues such as "the safety and supply of foods" (2005), "Food functions" (2006)and "Shoku-iku(food culture education) (2007)".
Since 2008, this symposium was renewed to be more academic and to address the topics on the role of food factors and natural products in ant-aging, a basic strategy for the prevention of diseases hampering QOL in the longevity society such as cancer, lifestyle-related and neurodegenerative disease. The symposium also focuses our interests on the integrative or complementary role of dietary supplements and natural products that would be more important and practical in cancer therapy in modern medicine.
